At a time when gasoline is at an all time high, the cost of food increasing and many wondering if they will have a home or job next quarter, we at Rodri Entertainment kick into high gear so that for the 5 hours you are with us at the Hollywood Bowl we brighten your heart by delivering the best Mariachi show you have come to expect over the last 19 years.

We too have felt the crunch of the times but when we gather on June 21st we will celebrate to the fullest for we have all proven that we are warriors that can overcome whatever is put before us. It is a time to celebrate how privileged we are to even have a recession, to have a car with a large gas tank, to have a transportation system, and to be together with family with the gift to gather & celebrate with friends. For this and so much more we will celebrate for five hours on June 21st!

Our show this year includes top talent that all of us are proud of; Mariachi Imperial de Mexico, Mariachi Monumental de America, Mariachi Tapatio, and the MARIACHI USA All Starz featuring Mariachi Arrieros del Valle, Mariachi Las Azucenas, Rhonda Garcia, Maureen, Carlos Parra, Yafet, the 20 member MARIACHI USA Ballet Folklorico; and our traditional spectacular fireworks show! Oh yes…and me! Bring your dancing shoes for the traditional Halftime Jam and your singing voice for our also traditional sing along of Ella, El Rey and Volver!
CINCO DE MAYO KTLA 5 AND MY FM 104.3 SIMULCAST

KTLA 5 and MY FM 104.3 hosted a live Cinco de Mayo simulcast on the KTLA lot this past Monday May 5th. Rodri Entertainment was on hand for a special interview with REG founder and CEO Rodri and a live performance by Mariachi Monumental de America, one of five featured artists at the Hollywood Bowl on Saturday June 21st for the 19th Annual MARIACHI USA Festival.

for a special Mother’s Day Taping

Rodri and the REG crew visited the set of “Tu Estilo” with host Daniela Ganoza for a special Mother’s Day taping that aired Saturday May 10th on UNIVISION 34. Mariachi Monumental de America was also present with a special serenade to all the mothers that tuned in. More MARIACHI USA artists will be featured on KMEX 34 in the coming weeks.

Food is always at the center of any celebration. For so many of us, eating is a ritual and I don’t mean the ‘grab a sandwich and run’ type of meal. Most of the meals we cook for our family and friends revolve around memories and nostalgia via abuelita hand me down recetas. Such is the case with my Mom’s arroz con pollo recipe. Every now and then I get calls from friends announcing that they are in the kitchen making my Mom’s recipe. Mom passed five years ago, yet her memory is deliciously alive in many kitchens.

As an immigrant to this country at age 7, I landed in a foster home in Albuquerque where black beans were nowhere to be found and I just couldn’t get celebratory about pinto beans (these days I love frijoles charros just as much). I clearly recall someone going to a ‘hole in the wall’ neighborhood store and magically producing one can of black beans and the label said GOYA. That small, seemingly innocuous can, became a symbol of emotional connection for me, a can that gave me so much joy, yes, frijoles negros como los de mi mama!

And so I share the story of a family owned company whose success is founded in providing the very basic pleasure of good food. Goya Foods was founded in 1936 by Spanish immigrants Prudencio and Carolina Unanue, who began by importing authentic Spanish products, such as olives, olive oil and sardines, and selling them to New York's growing Hispanic population. More than 60 years later, Goya has become America's premier purveyor of rice, beans, seasonings, delicious nectars (mango is my favorite) and authenticLatino specialties.

Times have changed and it’s not always easy to cook from scratch, so for me, heating up that reliable can of black beans with a squirt of olive oil is quick comfort but it continues to ground me with family tradition.

Food choices for gatherings can be challenging for Latinos with diabetes. It is not easy to find dishes that are diabetic-friendly and that keep in line with diabetic nutritional guidelines. Goya Foods’ Mexican Nopalitos Salad is an ideal and healthy dish and a great picnic dish for the MARIACHI USA festival. Bring extra to share with your concert neighbors.

GOYA FOODS
Recipe
 
Ensalada Mexicana de Nopalitos Goya
1/2 jar of Goya nopalitos
1/2 onion finely diced
2 diced tomatoes
1/4 bunch of cilantro/parsley
4 tbs. lemon juice
2 tbs. red vinegar
1 avocado
2 serrano peppers
1 tbs. Goya Salsita Habanera
1/4 lb. white cheese white pepper, to taste salt, to taste
 

Cooking Instructions
1. Place the Nopalitos in a large dish. Season with salt, white pepper and adobo seasoning.

2. Add onion, mixing often, cilantro and parsley, tomatoes, serrano peppers, vinegar, lemon, and Salsita Habanera Goya.

3. Mix well and serve on a plate and place avocado and tomato wedges around it, top with white cheese and plenty of diced parsley. Serves 13
