At a time when gasoline is at an all time high, the basic staples of food increasing and many wondering if they will have a home or job next quarter, we at Rodri Entertainment kick into high gear so that for the 5 hours you are with us at the Hollywood Bowl we brighten your heart by delivering the best Mariachi show you have come to expect over the last 19 years.

We too have felt the crunch of the times but when we gather on June 21st we will celebrate to the fullest for we have all proven that we are warriors that have and will overcome whatever is put before us. It is a time to celebrate how privileged we are to even have a recession, to have a car with a large gas tank, to have a transportation system, to have medical care, to be together with family and the opportunity to gather & celebrate with friends. For this and so much more we will celebrate for five hours on June 21st!

Our show this year includes top talent that all of us are proud of; Mariachi Imperial de Mexico, Mariachi Monumental de America, Mariachi Tapatio, and the USA All Starz featuring Mariachi Arrieros del Valle, the outstanding all female Mariachi Azucenas, MARIACHI Rhonda Garcia, Maureen, Carlos Parra, Yafet, the 20 member MARIACHI USA Ballet Folklorico; and our traditional spectacular fireworks show! Hollywood Bowl Press Conference

The Hollywood Bowl held it’s annual press conference on Monday March 17, announcing the 2008/2009 season. L.A. Philharmonic General Manager, Arvind Manocha previewed season highlights including, the Playboy Jazz Festival , June 14 & 15 and the MARIACHI USA Festival, June 21. This is a great forum to share some of my personal stories that may be of benefit to you, since we all learn from others’ experiences. Being a homeowner is equally rewarding as it is challenging. Ladies, those of you that are sole homeowners/dwellers clearly understand the value of the following story. The challenging part came into play recently. I have a majestic 120 year old California oak as well as magnificent Cyprus trees that tower 60+ feet. With the recent winds one of my 70 foot trees came tumbling down on a highly traveled walkway inside the property and took out everything in its path, including a 30 foot wall, countless favorite pots, many plants, all power, cable, and telephone lines, and sent my resident squirrels screaming and bird nests flying!

Grateful that no one was hurt, but a bit panicked as there were live wires everywhere, I immediately called DWP and they were on my property in less than 30 minutes...knights in shining armor. I then called my insurance company, and this was a true test of getting my money’s worth.

The appraiser was on my property within 24 hours, reviewed the situation, and announced that he would be in his car for a bit. I figured he was having his lunch. He disappeared into his car for thirty minutes and when he reappeared he had a check for the damages as per my homeowner’s policy. I was truly amazed at his efficiency and most appreciative of the appraiser’s professional decorum and calming attitude.

Farmers Insurance came to my rescue over and above my expectations. That is the reason why both my car and residence remain insured with them.

Spring is here reminding us that summer is near. And as the weather warms up we begin to think ‘outdoors,’ ‘food,’’ ‘music’ and ‘friends’. Ahhhh yes it sounds like, feels like, tastes like MARIACHI USA… AY AY AY. Start talking up what you’re bringing to eat this year. A favorite dish in the box seat area is Rodri’s Mom’s arroz con pollo. Luz Marina’s published recipe is coveted by those who have eaten this delicious dish and here it is for you!

Arroz Con Pollo Cubano
1/3 cup of olive oil
(10) Skinless & boneless chicken breast fillets or chicken pieces
(1) Medium white onion (chopped)
(1) green bell pepper (chopped)
(1) red bell pepper (chopped)
(8) large cloves garlic (crushed)
1/2 bunch fresh cilantro leaves
1/4 teaspoon ground cumin
1 (14 1/2 oz.) can tomato puree
(6) cups water or chicken broth
(2) pounds (4 cups) medium grain rice
(2) teaspoons salt
1/4 teaspoon bijol (yellow coloring)
3 (12 oz) can beer (1 for the recipe, 2 for you)
1 (28 oz) can peas (drained)
1 (4 oz) can pimientos (drained & sliced)
1 large “peringuin” (pinch) saffron
 

Cooking Instructions

1. Frying & Seasoning: In a large skillet, warm the oil over medium high heat. Add the chicken and fry until lightly brown. Stir in the onion, bell peppers, garlic and cumin. Continue cooking, stirring frequently, until the onion is tender. Stir in the cilantro and cook 1 minute.

2. Simmering: Add the tomato puree to the skillet. Reduce the heat to medium low and simmer uncovered for 5 minutes. Add 6 cups of water, the rice, salt, bijol and saffron, stirring to mix thoroughly. Bring to a boil; reduce the heat to very low. Cover and simmer undisturbed for 30 minutes. Do not remove lid or stir while rice is simmering.

3. Finishing & Serving: Remove lid from skillet. Slowly pour beer over cooked rice until it is completely absorbed. When the beer foam subsides, stir to mix lightly and continue cooking uncovered for 2 to 3 minutes. Squeeze the juice of ½ large lemon if desired. Transfer the arroz con pollo to a platter (or leave in the skillet) and garnish with peas and pimiento. Servir immediatamente a tu familia!
